Yup, gotta love it. ---Anyway the mac n cheese looks so yummy and now I have yet another recipe to try. Even if I could cook all day every day, I'd never get to try all the recipes I have on my list.


Gravatar Thank you thank you thank you! I have been dying for some mac n' cheese. It has been THREE YEARS at least since I last had any. Some vegan versions just sound like a pain in the ass, but this seems simple enough!


Gravatar I haven't even tried your recipe, and I'm sure it's awesome, but this is actually the best vegan mac 'n' cheese ever. Yes, it does require like $20 worth of agar agar, but sweet Jesus it's yummy, and it alone persuaded me to buy the cookbook. I think I'm going to go make a pan tonight.

Gravatar Just wondering where you get your "good tasting" nutritional yeast. I've only bought the stuff once (in bulk at Nature's Bin in Lakewood) and I have no idea what the stuff is supposed to taste like. Any recommendations?


Gravatar That was actually the original recipe-creator's tip. I actually don't know what designates a "good tasting" nutritional yeast. I just nab whatever's available (and it always tastes yummy to me). Nature's Bin is cool though, so I'd imagine whatever they have would work fine.

Gravatar I finally got around to making this for me and the boyfriend since it seemed like such an effort just for me and, WOW, it is truly amazing!! We completely stuffed ourselves with it (and now I can hardly move...but SO worth it!).


Gravatar Pardon the late comment, but I wanted to pass on a way to achieve creaminess after refrigeration. It involves a microwave.

Are you still with me? Yes, I reheat foods in the microwave. Sorry to offend any that ban them from their homes.

Oh, back to the mac 'n cheez. Scoop out your serving onto a plate and spread it around so it's not in a big heap. Pour a little soymilk over all of it. I said a little...you don't want the stuff swimming in it. Now cover and heat 2-3 minutes in the microwave. The extra moisture will bring the dish back to its original (well, almost) creamy wonderful state.

Gravatar I have been near-vegan for a year now. I've missed a lot of the dairy products, but am quite intolerant, so I can't cheat. It's too painful.

Can someone recommend a "good tasting" nutritional yeast?

I feel silly asking some of this, but am wanting some mac n cheez. My change in diet has been necessary for my comfort. I've just been altering what I would normally eat, to be without dairy or any meat product.
I really appreciate the help.
I'm currently looking to broaden my horizons. I'm getting bored with the food I've been eating, which leads to cravings of food that bothers me (but won't eat), which leads to a lot of frustration.

Gravatar Lora: Soy drink is really just "soy milk." And you can easily sub rice milk or something else instead. As for "good tasting" nutritional yeast, as I've mentioned before, I love me some nooch like nothing else, so I'm a bad judge of that. Plus, I just buy whatever I'm able to access. So your guess is as good as mine. (Sorry I can't be of more help on that front--perhaps someone else reading this might be able to recommend a particular one to you.)

Gravatar oh my god. i just made this last night. THIS TASTES EXACTLY LIKE MY MOMS MACARONI AND CHEESE.
im eating it right now for lunch. i mixed in about 3/4 of a cup finely chopped onion just like my mom used to. i also sprinkled the top with extra yeast. before baking. i really seriosly cant tell the difference from the last time i had my moms...about 6 years ago since ive been vegan ever since. i must share this amazing recipe with the world!!! now i know how you feel!


Gravatar oh, also i just combined both sauces in one pot from the beginning saving the soymilk to mix in last. it turned out fine and left the other pot for the pasta cooking and then some green bean blanching. yum!

Gravatar So I just had the brilliant idea of using the cheez sauce from this recipe to do some potatoes au gratin (got a buttload o' potatoes from the organic delivery box that I gotta get rid of).

Will let you know how it goes!


Gravatar Alright, did the potatoes au gratin last night. These are the modifications I made:

* Subbed thinly sliced (about 1/4") new red potatoes for the pasta (duh)
* Added one medium onion, diced
* Tripled the Dijon in the cheez sauce

Stirred everything together and poured it in a greased 13" cast iron skillet.

Cooked that at 375 for about an hour, then added panko breadcrumbs mixed with margarine for the next 15-20.

This came out really well. The potatoes had a delicious crust around the outside and the buttery panko browned up nicely.

The only change I'd make would be to add some heartier spices, as the interior was just a little bland. A lot of cracked black pepper would have helped.

Gravatar Well, it's in the oven. I had my omnivorous hubby try it before it even went in the oven. He loved it! I'm waiting for it to be all bubbly before I dip in.

I ’m still all about the creamiest mac n’ cheez ever, but I was jonesing for a dinner that wouldn’t take three different pans and a casserole dish, something barely more difficult than squeezing cheese product out of one of those shiny foil packages used to be. And Vegan Dad hooked me up. This was deliciously rich and creamy and cheezy, and only required two pans and the blender. My only complaint was that the sunflower seed taste was a little strong for me - if I make this again, I think I’ll use less sunflower seeds and more pine nuts. But over all, super tasty, and totally hits that “I want packaged mac n’ cheez” spot without requiring resorting to Mac and Chreese.


Gravatar Awesome. yeah, I keep hearing good things, so SOMETIME in the near future, I plan to try his recipe out. Also: with the creamiest mac n' cheez, you can do it in one pot. I've started just making the white sauce and then adding the cheezy sauce ingredients TO the white sauce, and it works just fine. Just FYI!

It's absolutely delicious. It's almost ridiculous to say but, I think I would choose this over the real deal!
