My mother would also never throw out food and after she got a very early model blender she would just put all the leftover bits and bobs in it and that was soup - every day. Spinach and tomato is the one I remember for its lurid colour combo.
Sometimes the don't throw ethic makes the most inspired food combinations, don't you think? When I made your pea soup, I didn't have walnuts but still had half a bag of ground almonds in the fridge left over from Christmas (embarrassed to say how long that was) so that went in instead and it turned out lovely and milky as well as nutty so now I often sling some ground almonds in a soup.
