Yum. I love halloumi - in a sandwich, it's the veggie bacon. It's worth getting good-quality halloumi. It the water content is too high it spits and disintegrates in the fan. I never thought of putting ground coriander on it, though. I'll give this a go next time I have a hangover and fresh mint or basil in the house ;-)
