Gravatar Potatoes are actually high in potassium and when baked with the skin, it keeps all its original vitamin C. The skin keep vitamins from being boiled off during cooking.

Recipes certainly help in cooking. I am not a good cook either but with a good recipe, I can follow along.

I'm sure you'll be a Nigella or Giada soon enough.

Gravatar I had not seen that show about potato farmers but I would think if you washed them and cooked them enough that any bacteria would be killed regardless. Even if the farmers don't pee in the fields, I'm sure there are lots of animals that do anyway. So just don't think about it. If you buy red potatoes, they have a thin skin and are easily edible. Just wash them, cook them, and eat them with the skins on. Plus, they are a pretty color and may look good with your phone!

Gravatar I love potatoes and scrub the dirt off with a brush. but I don't peel them because as Leah said the skins have a lot of vitamins. I used to love fried potatoes but while trying to lose weight I don't really fry anything anymore. It sounds like you are keeping very busy in Ireland. We eat rice more than potatoes because my son-in-law is part Japanese and loves his rice. I usually cook Jasmine Rice.

Gravatar We must be thinking on the same wavelength. I was just watching Giada last night, commenting on how it seems cooking without having to retouch her makeup seems so easy with her. I just put a touch of lipstick this morning to channel Giada's vibes, heehee. Must be working too...

Personally, though, I still like Alton Brown best. I like how he combines cooking with chemistry. Science nut that I am, it helps me a lot to think of the processes of chemical reactions. Besides, his recipes are so, uhm, scientific!

i feel like putting on make-up too while cooking, but i'm going to look strange because the rest of my get-up is just sloppy - sweat pants and tanks. yep, regardless of the cold weather here, i am so warm in the kitchen.
i haven't seen alton brown yet, the scientific method sounds interesting. not that i do anything precise in the kitchen, but it's nice to dream on.
i'm visiting no special effects now, thanks very much!

and yes, i am doing very well here, i prefer to go slowly with my transition.

Gravatar Girl, you are going to love me.

First you get youself a sharp peeler. Get the nice big potatoes and peel them. Then you take your peeled potatoes and put them in a microwavable bowl or dish. Add a little bit of water and microwave for 20 minutes. Voila. If you want chips you slice the potato and boil in a little oil for a bit, or you can mash the potatoes right in the bowl! OR you can cut the cooked potato in cubes, add mayonaisse and a little green pepper and a little salt, then rerigerate. Voila, potato salad.

I cooked/boiled my potatoes with the skin on because it is easier to peel. But before I cook them, I thoroughly wash them...actually I soap them to be sure.
Have you tried making shepherd's pie? it's my favorite

Gravatar Hi Odette! Stumbled on your blog from Toni of Wifely Steps. Love it! Like you, I am recently married (well just turned 2 years last month) and I was "forced" to learn the joys of cooking. Giada is also one of my favorites. You should try her Linguine with Chicken Ragu. You can make a big batch of her marinara sauce and use it for other recipes. Keep me posted! Hope you enjoy it
