Love this topic! I made an amaro cocktail the Dolce Milano and also played around with Zwack-resulting in a Zwack Morris. http://spiritmeaway.com/?p=1505

Chuck, here's my entry for this month's MxMo using a strange Spanish amaro:

Here is my entry for the May MxMo - The Amaro Manhattan

This drink is based on a cocktail from NYC's The Red Cat. It is a very light tasting Manhattan. The key to this drink is the Amaro Montenegro which has a lovely herbal flavor, and the Girotissimo Patisse brandied cherry.

- 2 jiggers Woodford Reserve Bourbon (Maker's Mark would be OK, too.)
- 1/2 jigger Amaro Montenegro
- small piece of orange with skin, twisted
- 1 brandied cherry with 1 teaspoon of the brandy (we use Girotissimo Patisse brand - very nice brandy flavor and not too sweet. The cherries are labled 'not for human consumption, professional use only' - but we have not felt any ill effects.)

Pour over ice cubes, stir and serve.

Hi:

This is my entry for the May MxMo on amaros. It's called the Aperol Flip.

I can't wait to see the rest!

Virginia, thanks so much for participating! In the big roundup of all the recipes I'll just link back to your comment, which will do instead of a blog post.

The "not for human consumption" advisory is really strange. What professional use for brandied cherries would there be besides human consumption? If you or anyone else is looking for a good brandied cherry, at home we use Les Parisiennes cherries in kirsch brandy, made from real Morello cherries. They're superb, and come in several jar sizes:

Hi Chuck,

Thanks for hosting! This was fun to do, even though I'm like 2 years behind many other bloggers on playing with Amer Picon.

Hi, I've done mine for this month its the Jasmine Cocktail. The url is http://myachinghead.net/2009/05/...au-lemon-juice/ Thanks for hosting!

Chuck, I'm looking forward to trying the Eagle Rock as soon as I can get my hands on those chocolate bitters. Any suggestions for an alternate amaro? I've never seen the Borsci anywhere around here.

Thanks,

Mike

My Xocolatl bitters arrived today, and the Eagle Rock is the first thing I made with it. Well, almost...I don't have Amaro Borsci (I've never even seen it), so I substituted in Amaro Nonino. Great drink, and I love the scent and kick of the chocolate spice you get with the new bitters. Now I'd like to try it with Borsci if I could figure out how to get a bottle....
