I have a mashed potato dish that rocks. It would be vegitarian but not vegan since it's made with cream cheese and sour cream.

Artichoke Cheese Dip
Preheat oven to 425ish degrees
4 blocks Cream Cheese (Heated in a sauce pan)
As it softens, add 1 can of chopped artichokes and 2 to 3 tablespoons of minced garlic.
as it gets to the really soft melty stage, and 1.5 cups of shredded parmesean.
pour the mix into a caserole dish and add another cup to cup and a half of Parmesean to the top (spread evenly) and bake till it has a nice tan.
Seems to go over well.
