I call this Basque beans, no idea why. If you're going to use dried beans look up how to prepare them. Or use canned white beans. If you're using canned, rinse them well.
Basically onions sliced very thinly, saute in oil slowly until soft. Add the beans, Can of tomatoes, thyme (way better if you find fresh thyme, pepper, and water if you need it (you shouldn't if you use canned beans)
that's it. Cook til it's done, not long for canned beans.
Ot you could make Grandma's gross baked beans, other people like them.

My friend once made a lima bean loaf, it was really good and I think that it is fairly high in protein.
I don't know the recipe but I am sure you can find it on the net.

No, the lima loaf was awesome, so super good.
Does yogurt count as dairy? I ask as some people can tolerate yogurt - if so I have a lovely lentil/rice recipe. If not, still go with the lentils/onions/basmati all in one pot with crisped onions on top.

i'm also trying to keep the fat really low because one of the people at dinner has recently had her gall bladder removed, which means she can't tolerate fats.
