Like Joe, I too would love to have that chili recipe....If anyone out there has even come close, I'd like to get that from you..I'm from Little Washington and have gobbled down my share of dogs from Bill's...Almost the first place I hit when I go to town...

I was born and raised in the small town of Chocowinity...'bout 5 miles from Bill's. It's safe to say that I have put down a thousand or so of those dogs myself! :o) To all the locals, Bill's chili is a true mystery. There have been many attempts to copy it and some have come close but none that I have tasted are there yet. I'm a wondering where you got your list of ingredients from? White beans, ham hocks, etc. Was this your analysis or did they let you in on a little secret???

Gravatar Ha hee... that's great figgering. Dun & Bradstree would be proud of you. I think you got the analysis right except I doubt the volume estimate a little and wonder how he keeps the help from turning over every day. One hour would be enough for me. You could do that in S.P.! The upper street cafe is up for grabs. She turned down $50 G's I hear. That's a fine, interesting post you've blogged here!
