Cooking Light and Everyday Food are my bestest cooking friends too.
One of my absolute favorite summer dishes is the Mojito Grilled Chicken Sandwiches from Cooking Light (from one of last summer's issues; I am sure you can find it online). I actually started growing my own mint specifically for this recipe (and because I freakin' LOVE mojitos). It is so easy and so tasty and so summery.
I am such a sucker for fresh fruit and berries that I honestly can't keep them in the house long enough to actually bake something with them. But all of your recipes sound so delish.
Trader Joe's makes a good Mojito sauce. I know because Yum baked chicken and threw some on, and it was delish.
