SO glad to have you back- and thankful that you're ok!!!
I wanted to share w/you that I am NOT a baker by any man's definition.... BUT I tried the recipe you posted for "The Perfect Party Cake" this weekend (for Father's Day), and I have been dying to share with you- it turned out GREAT!!!
I am TOO excited!
Next time though, I think I'll use the 8" pans... the recipe didn't specify which to use, so I just did the 9", but the cake wasn't "tall" enough for my liking. Do you have any suggestions to ensure that it doesn't fall flat? Make sure all ingredients are room temp first... I know my eggs were a little cool. But in the end...it tasted WONDERFUL!
The lemon flavor was JUST enough (I'm not usually a fan of lemon desserts), and I used strawberry preserves instead of raspberry (my husband is obsessed w/everything strawberry)... and I topped the cake w/chopped walnuts instead of the coconut. The nuts were the perfect counter for the smooth, creamy buttercream topping!

Awww, Sayrah!! You tried the recipe! I'm soo glad it turned out well for you!
I've actually made this cake twice, the 2nd time being far more successful than the 1st. Next time make sure the eggs are @ room temp and be sure to follow the instructions to a tee. Don't deviate by mixing it "just a wee bit longer" because you think it needs it. This is what I did and I also ended up with a cake that didn't rise very well. If you torted the cake (sliced it into two separate layers) it should've made up for the lack of height.

Ok... follow directions and all ingredients should be room temp... Ok, I have a [possibly very silly] question... How long can you let an uncooked egg sit out before it goes bad? I have this thing about food going bad... but other than setting the eggs out to warm up a bit, I don't know how to get the to room temp...
Ok... I have GOT to see what you just posted... you are really inspiring me to get in that kitchen! LOL!

You should take the egg out 24 hours prior to using it. No need to worry. :o) Maximum for me is about 48 hours BUT it is said that you can leave it out for 3-5 days since it takes up to a week for the egg to age.
