The Early Church Fathers Comments

You seem to be well acquainted with the early church fathers so I hope you will be able and willing to help me out with this question for research purposes.
In his work, “Against Heresies,” Irenaeus testified that the apostolic tradition can be known by reading Clement’s letter to the Corinthians, and Polycarp’s letter to the Philippians. He also gave a brief synopsis of what Clement wrote. None of the Sacred Traditions of the Catholic Church appear to found among these writings.
Can you explain why the Catholic Church claims that the doctrines of Sacred Tradition were handed down from the apostles when there appears to be no record of it?
Thank you.
