And yes, I love condensed milk straight out of the tin. You obviously had early Nigella-esque tendencies, sneaking treats out of the fridge like that.

Gravatar Many years ago there was a recipe for Millionaire's Shortbread in the English Womens Weekly (which is sadly modern now) and they made the caramel in the microwave, and I have done that ever since. Much easier than on the stove. I like the shortbread base. Looks Yummy. I make this a fair bit, it's always popular. I sometimes make twice the caramel too!!!

Gravatar You can keep the chocolate a bit more gooey by thinning it with cream when you melt it.

This reminds me of my peanut butter brownie with chocolate topping recipe. And my toffee-chip shortbread cookie recipe.

Gravatar Oh, yum! I'm a sucker for anything with caramel in it. Just to put another spin on the name, isn't condensed milk caramel also called dulce de leche? At least that's what I thought dulce de leche was...Either way, this sounds like a winner!


Gravatar My wife made this the other day. I have to second the notion of adding cream to the chocolate (is this called a ganache?). It makes it cut like a dream, and the chocolate doesn't squeeze out the caramel (as much) when you eat it.

I love your blog! Just recently picked up baking thanks to Nigella's HTBDG, which has totally changed my perspective on baking. It's really great to have some sort of reference point when I'm trying to figure out if I've got the cake done right (e.g. my chocolate cheesecake also flecked instead of marbling)! Gravatar Oh condensed milk! Was I the only one excited at the prospect of it coming in a tube? No need for a can opener!

I have a friend who buys cans of condensed milk with the express purpose of having it in the fridge to eat straight from the can.

I've often looked at this and wondered, caramel slice as much as I love seems a little fiddly normally.

Gravatar Glad to see a new post That millionare's shortbread is amazingly delicious, as a huge fan of caramel I find it hard to stop at one piece...there is a variation on this recipe in Forever Summer which adds salted peanuts, I used salted cashews instead and it was surprisingly divine. Your photos look fantastic too btw!

Gravatar I have not made Nigella's version but I am very fond of the fabulous Australian chef Bill Granger's Chocolate Carmel Slice in Bill's Holiday. His recipe is very similar, however he uses desiccated coconut in the shortbread and flaked sea salt on top of the dark chocolate-YUM!! A huge hit at my office and among all of my friends!

Great recipe. if you use baking paper with some over hang in the baking dish you might find it easier to cut the slice. When removing from the pan you could hold on to the over-hanging baking paper and pull out the slice. the use a large shape knife dipped in boiling hot water. You should get a cleaner cut. Do this repeatedly as you cut up the slice.
