Wow I feel exactly the same about pretty much all of this. I started out in a job I pretty much hated right after college, just to get experience in my field. Now I'm at a job that I really like, but I'm turning into some super professional "safe" version of myself. It's so odd. Especially since I have to do a lot of "forced socialization" (aka networking at overnight seminars) so it's hard when you're supposed to let your hair down, how far to actually go. It is a balance, but it would be nice if I could just truly be myself (at least when it comes to my sense of humor). At least in college when I was waiting tables I could really be myself.

Dear ts,
Could you tell us a bit more about the kind of work you're doing? Thanks!

but oh no, my thin veil of anonymity! heh. all right, i'll share a little more about my work:
i work in higher education here in new york city. working in higher education is great; you get the big plus of working with students and, depending on where you work, you avoid the issue of funding that other offices in education suffer from. i've also learned that being the nerd/geek (neek? gerd?) that i am, i like working and living close to a college campus. it's a fun environment.
...but, of course, it's not for everyone. good luck to those of you out there looking for that first job, and a continued good luck for those of you trying to find a field that makes you happy.
