Gravatar My last fudge experience produced a tray of gloop that had't boiled for long enough which I then had to scrape back into the pan and re-boil getting a sticky mess everywhere and turning a 10 minute cooking task into a half hour chore - grrrr

You know, it looks exactly like American brittle or bark, so I think it was in fact a very successful candy making venture. And it must be absolutely delicious on ice cream.

The opposite happened to me , I was trying to make toffees but no one told me that humidity & heat can stop the whole caramelising thing happening.
