It's really shitty that you have to tip out on your sales, not on your tips. It's a whole crock of shit, actually.
Think about it. Are they trying to blame the poor tips on your service? As if you weren't working just as hard as every other day? (Which seems to be the logic in the immutable busboy percentages.)
At both my clubs, we tip 15% ro 20% of our tips. So if you recieve some insane tippage, the cut is large; but if you have a screwy night and get stiffed by some fuckups, the bar suffers too. I like that better.
