Interesting and very informative! These sort of reminded me of Red Beet Eggs which are native to Lancaster County (Amish Country) Pennsylvania. The difference is that you hard boil the egg first, then peel them, and soak them in pickled red beet juice. The color of the egg is silmilar to what you pictured, and the eggs are sortof rubbery. I love them. I would like to try the eggs you have here. I might have to make them!

My family and I love the salted eggs. We have it in Hawai'i too. You can get it in the markets there or go to China town. In fact they have it at the chinese take out places. Thanks for stopping by.

I've never acquired a taste for salted eggs. I tried them once but didn't care too much for them. The pink ones are pretty, though.

That's a beautiful image. I don't much like eggs, but they are very pretty with the pink and the white next to each other.

The red eggs are so pretty! I appreciate you sharing the recipe and I am going to give these a try for Maricel, my brother's finance, who just arrived yesterday from the Philippines. I can't wait to meet her but it looks like it is going to be at least another week. She will be staying with my Mom for three months. Congratulations on being the site of the day!

That is so very interesting, I'd never heard of these before!! My mom use to make Pickled Eggs which were put in a mixture of salt and vinegar but I know these are completely different. Such a great subject for this weeks' theme:-) Mine is up too!!

Alam mo, Rachel, when I was staying in the dorm, to save on my allowance, for lunch I would just mash salted eggs into about two finely chopped large tomatoes and use it as topping for crackers or filling for pandesal! I still like to eat it that way.

That's very interesting ! I know that in Germany they do also eggs like this but instead of water they add vinegar that makes it more spicy. It's called "rotten eggs" and mostly served with beer.

this is one of hubby's fave side dish... its about 75 cents here.... very expensive. thanks for sharing this, maybe i should make my own red eggs from now on.

Very interesting post! I live in Malaysia and boiled eggs are a very common breakfast food (with coconut rice, tomato, cucumber, anchovies and peanuts) - nasi lemak. This seems like a similar, Filipino version.

I just read about these eggs in my audiobook, Salt by Mark Karlansky! It's fascinating because I would think the eggs would rot but they don't. It sounds good with tomatoes. I may try it!
