The whole "double if necessary" for a recipe that makes 2 loaves is funny. We make one loaf every second day. Mat can't eat bread (not sure why; not a gluten thing but bread makes him feel horrible) so there are just the two of us. We don't have bread at breakfast, nor with dinner. But we do make peanut butter sandwiches for lunch most days. One of the joys of homeschooling since pb is banned in most schools.

Thanks for the tips about how long to knead, etc. We don't measure very accurately at all. We just add flour until it is the right consistency; some by mixing, some by kneading.

"Double if necessary" around here is necessary if you want anything to show for your efforts; my gang can polish off one loaf, or tray of rolls/buns, in their efforts to serve as taste testers. We go through at least a loaf a day, with the usual poached egg on toast for breakfast and sandwiches for lunch.

I don't bake every second day; with farm chores now taking at least an hour a day, if I can bake just twice or three times a week I'm thrilled.

I wouldn't have bothered with the kneading or measuring information if Melissa hadn't asked for particulars : ). Now when is that knitting for idiots tutorial?!

I KNEW you were the type to bake her own bread. I tried just once - it was good for door stops and not much else. I want to try again this winter with the kids...either that or I will pull out the bread machine again - lol.
Thanks for all the tips
Karen

Karen, I didn't bake bread (or much of anything else) all summer :) And I can't sew much either.

Becky - you rock!

Thanks for all the future oohs and aaahs over bread in the next few weeks! I can't wait to try the colonial bread...and those cookies...and...:)
Thanks a bundle - Penny
