Great job. Pleating takes time to perfect but I think you did a great job anyway. That filling did sound good and one of these days I will try it.

your skins look pro, super thin!
Hub and I totally did the same thing... just kept eating them.
I'm not sure if you did this when you were frying them, but did you put in a little bit of oil at the beginning? And make sure the heat was low-ish meadium? I think if you add a little vinegar to the water when you begin to steam them, it helps? But I have no clue about the science stuff... Just attend to them and keep them moving every once in a while I guess.
Enough tips? haha hope they even help!

That's a great looking meal!
My solution to the potstickers? Non-stick pan. :D
When I've used a regular pan, make sure the pan is hot before adding the oil. It helps to keep it from sticking. When the potstickers are golden at the bottom, don't turn them, leave them stuck to the bottom and add the water or broth. By the time the broth has cooked out, your dumplings should easily peel off the pan. At least that's how it's worked for me before the non-stick pan came along.
