Isn't that one of the best cookbooks? I recently adapted the Italian sausage for a pie. I was test-driving the book from the library before deciding whether to purchase it. After the sausage and your corned beef testimonial, I will put it on my Amazon wish list. Now to find some brisket.

The sandwich the next day is my favourite part. Charcuterie is a great book, I haven't bought bacon since I started making my own.

Woah! I have two briskets in my freezer right now, and love corned beef! And I have next week off too. 
No Penzy's for me, but I can probably make the spice and do it myself.

OK, that's it. I'm ordering the book when I get back home (my coupon is at home or I'd order now) and I will be making corn beef.
And sausage, I've been moving that up my list of things to make for ages now, I think it's just about at the top.
