Isn't that one of the best cookbooks? I recently adapted the Italian sausage for a pie. I was test-driving the book from the library before deciding whether to purchase it. After the sausage and your corned beef testimonial, I will put it on my Amazon wish list. Now to find some brisket.
The sandwich the next day is my favourite part. Charcuterie is a great book, I haven't bought bacon since I started making my own.
Woah! I have two briskets in my freezer right now, and love corned beef! And I have next week off too. 
No Penzy's for me, but I can probably make the spice and do it myself.

Yay! I can have corned beef... All I have to do is bring the spice back on my next trip.....
So interested in trying out the recipes from ruhlman's book. I can definitely see why you would never need to buy corned beef from stores anymore.
Holy crap. I wonder if I can find corn beef spices here? Will have to look, and add that book to my wish list.
