I too felt the sameway when I used tofu like you, instead of paneer for paneer recipes.
Instead of deep frying, what I do is, while the main curry is cooking, on other pan or iron skillet, I heat up 1 or 2 tsps of oil, on medium heat roast the tofu cubes 5 to 10 minutes each side. There will a golden crust on each side and they look just like the deep fried ones(almost). Then I add these cubes to main curry. Sometimes I just add plain ones too, like you did. they soak all the curry sauce, taste good.

I've tried this too! with Palak Paneer and I was too diet conscious at that time to even think of adding real Paneer. It wasnt disastrous and my friends loved it.
