That was actually a lousy thing for the "business manager" to do, and you obviously need to have a discussion with him. But you know, you should be out looking for other opportunities anyway. Posting a sign (Experienced Singer Available)in a music store worked before...
I think you need to be big about it. They wouldn't have kept you on if you weren't good, but if you're not up to the job they need to have backup.
I worry about this in my own job: What if the person who does it the other two days of the week does it better? I just do the best I can.
Try singing "Sticky Shoes" in your best sick voice. Could be a whole new (better) sound.
Muddy Waters used to love to showcase his bandmates. Handle it like that. Be confident and thank her for stepping in for you.
I like you better than her, and I haven't heard either of you, so you've got that going for you
