With regard to your tar problem, it sounds to me like the wood is not burning hot enough. It really shouldn't be producing tar in any significant quantities. Apart from the pollution, it can cause flue fires, or worse.
Likely cause is either not enough air supply to the stove, or the wood is not properly seasoned. Having said that, if it were burning hot enough it would probably produce overwhelming heat in the confines of a narrow boat.

Did you solve the chimney problem. Somewhere in my files I have an article from I think Waterways World on this very problem. If you have not solved it I shall start searching.
