Unpolymerized acrylamide is a major neurotoxin as well. We use it in the lab constantly. I'd like to know exactly how much acrylamide actually ends up in our fries and what the threshold condition is that cancer becomes likely. Chances are, you'll have to eat ten million fries to get cancer from acrylamide. Plan on eating ten million french fries? No problem, heart disease will get you long before the acrylamide does its job.

According to the FDA, the acrylamide level in fries ranges from 267-569 ppb depending on the market basket and chips range from 209-829 ppb. There remains no evidence that acrylamide causes cancer in humans at all, only lab rats.
Graham cracker can have as much as 946 ppb, but I haven't seen any warning labels proposed for them yet.

Sounds like complete nonsense, if you ask me. We are constantly hit by ionizing cosmic radiation. Yes, that causes cancer. Annual natural background exposure is 300 mrem. Taking a transcontinental flight causes about the same radiation exposure as a chest x-ray. Why don't we have warnings all over the plane? Well, because we already get 300 mrem a year from walking around, that's why. Maybe we should put signs up all over the world stating "Warning, planet Earth is known to be bathed in radiation that may cause cancer." The issue here is what constitutes real vs. perceived risk. Hell, the filaments used in Coleman camping lanterns are red hot, radiation wise. Yes, people need to be informed, but it just doesn't make sense to stick a warning label on everything. If you want to eat ten million french fries, then go ahead and eat Great post, thc.

When we were looking at opening a new production facility in the U.S. in 2002, we immedialy decided to look at 49 states. Califoria was never even considered.
This is another reason why.
