what the hell _does_ a vegan eat anyway?

Can you provide the ingredients for the mushroom medallions and sauce? They look wonderful!

Gravatar Hi Jamie - for the medallions it was roughly 1 cup of cremini mushrooms, 1/4 cup sunflower seeds, 1/4 cup pumpkin seeds and 1/2 cup of walnuts. Then about 1/2 cup of sun-dried tomatoes, 1/2 cup of cherry tomatoes, 1 tbs. nama shoyu, 1 tbs. olive oil, 1/2 jalapeno minced, fresh thyme & oregano to taste. It was processed all together in the vita-mix, placed into ring molds, then dehydrated 6-7 hours @ 105F

The sauce was fresh & dried cherries (about 1/2 cup each), cherry tomatoes, sun-dried tomatoes (about 1/2 cup each), 1/2 jalapeno and nama shoyu to taste, all pureed together.
