Wow, those seitan ribs look incredibly tasty. They look a lot like "real" ribs. Visually, they might even fool an omni

The sauce sounds amazing! How necessary is the deep frying of the seitan though? I've never tried it but I imagine that seitan wouldn't really benefit from deep frying the same way meat would and if I can skip some deep frying, that's generally a good thing.

@anon -- in this case it's necessary -- the cornstarch and deep-frying make the seitan firm enough to withstand the long braise without disintegrating, and the cornstarch helps thicken the sauce in addition to giving the seitan a unique mouthfeel that can be best described as "fatty" which in the case is a good thing

yep, between the mini-burgers and the "ribs" we've been breaking that rule pretty hard these days.
Part of the reason is we've been developing menus for the catering gigs.
It helps if the non-vegan folks see a familiar form when being introduced to unfamiliar foods (like seitan or tofu)...
But that doesn't mean we'll be eating the turkey-shaped loaf for Thanksgiving anytime soon
