That looks fabulously tasty. And wow, it never occurred to me that I could whittle my own zucchini noodles using a peeler! Nice and simple. All the raw cookbooks I've looked at use special equipment for making those; I like your solution much better. =)

as this was more "rustic" of a dish to begin with, we figured the peeler would make a nice fettuccine-style noodle...

Wow, I like the raw Wednesday idea. I do vegetarian night on Tuesday. Not sure I can convince them to do RAW just yet tho.

Thanks for this idea. I just picked my first thing from the garden tonight - a zucchini - and decided I'd better start looking for new ideas. I'm not a vegan - not even a vegetarian - but I LOVE veggies and the idea of zucchini noodles sounds delicious. Thanks! This is a great blog... I'll be coming back for more ideas.
