Every time I read this blog, I want to become vegan a little more.


Gravatar @Colleen -- we're in Kent, so we're close enough to Cleveland, but we really don't eat out much. The only place on the list we've tried is VegiTerranean (twice for lunch, twice for dinner). Pretty good stuff, albeit pricey.

@VeggieGirl -- yes, my son got the panini last time went -- he liked it very much...

@Dasha -- he basic story is to first peel the eggplant, cut it a little less than 1/2" thick, then use the standard three pan method.

Pan 1: Seasoned flour (salt, pepper, smoked paprika) --> Pan 2: Cornstarch slurry (2 tbs. cornstarch, 2 tbs. cold water whisked together) --> Pan 3: Seasoned breadcrumbs (about a cup of homemade preferably with 2 tbs. added nooch)

roll the eggplant in the flour, dip it in the slurry, and finally roll it in the breadcrumbs (pressing gently to make them adhere if necessary), and then deep-fry @ 375F until golden brown and crisp (about 2-3 minutes a side).
