that looks great! are rice paper sheets easy to work with? whenever i try to use filo dough i end up with a giant mess and this looks similar, but easier. thanks for the recipe!

Yes, rice paper, on the whole, is easier to handle than phyllo. We like the versatility of using it soft (like the summer rolls) or crispy like these packets.
Rice paper does have its own special requirements -- it's very delicate when dry, prone to chipping along the edges and has the extra step of soaking.

I'm obsessed with rice paper at the moment!!! I've been making Vietnamese-style rolls at least once a week. It's great to see other ways to put the rice paper to use - especially since it's winter in Australia at the moment (and hot food is so much more appealing than cold food!!).
