Pad Thai is one of my absolute favourites! My recipe is from a Buddist Vegetarian cookbook. The book has a bunch of typos, which can make cooking even more interesting (yay for guess work), and is half of why I love to cook with it. Your zucchini is lovely, and i've never used coconut milk in mine before.

Hi Nikki-
For the pad thai noodles, we used a "young coconut," which is a completely raw product. The white flesh inside the coconut is soft and can be scraped from the indside and cut into julienne.

The coconut water (which is clear) is drained off when you first cut/hack the young coconut. Here it's used in the dressing.
Coconut milk (which is a cooked product) isn't used in this recipe.
