At Black Water Farm, if you eat our food (uninvited), you become food. Anyone know a way to cook raccoon that doesn't leave it tough and stringy? Not even the pressure cooker works.

Anyone know a way to cook raccoon that doesn't leave it tough and stringy? Not even the pressure cooker works.
The recipe I have says to soak over night in the refrigerator in salt water, then blanch for 45 minutes, add 2T baking soda, cook a little longer, drain and wash in warm water, put in cold water, bring to a boil, simmer for 15 minutes....then stuff it and bake it for an hour.

Yeah, soak the coon in salt water overnight, it helps. Then pressure cook it, or slow cook it. But what makes the most difference is to be sure you're hungry when the coon is served.

Jeffery, you could always use the old catfish recipe:
Wet a pine board thoroughly, then roast the fish on it outdoors over an open fire, use salt and pepper, brush it with melted butter, whatever... When it's done, throw away the fish and eat the board.

I know that South Florida has an infestation of oversize iguanas lately, so maybe that is God's blessing on New Havana. Last time I was down there, something I thought was a big cat ran across the road in front of me. Only, it was a 4-foot-long cat. Took me a moment to realize what I was looking at.

1931 most of America was agrarian. Today, most Americans have no contact with livestock or wild animals of any kind. WIthout the A&P and a Govt EBT card, there is nothing in the pot but water, and even that comes from the govt.
