Of the four styles of BBQ, KC is dead last in terms of quality and taste.
Unless you enjoy slurping molasses out of the vat with a little bit of meat sprinkled in.
In order:
Carolina style
Texas style
Memphis style
KC style
Don't bother hemmin' and hawin', if you don't agree you're simply wrong.

I can't state it just yet, but Nate and Josh should expect me in late October early November. As for the rest of the States, I may have to come back again next year, not sure how much I'll be able to get done, there's so many things to do and a lot more Ilk to meet. As long as you don't do what that video Jac posted claimed, and that's do me in the butt.

South Dakota isn't really a BBQ place either. The place was settled by Norwegians, Swedes, Germans and various other Euros, as well as Yankees.
But I am learning, slowly. I smoked the hell out of some pork spare ribs a couple weeks ago. They were a bit overdone.

Sure.
Let's start off with Kentucky barbecue:
Meats, in order of specialty:
Mutton
Lamb
Pork shoulder/pulled pork
Sauce:
Black sauce, molasses-based, worcestershire sauce and bourbon are usually in the mix as well. Kind of sweet, but not disgustingly so like KC barbecue sauce.
Wood: Hickory and Oak
Best side dishes:
Burgoo
Cornbread
Cooking style:
Indirect heat/smoke
On my list up there, I would put it number two, behind Carolina style and ahead of Texas style.

Carolina barbecue:
Meats, in order of specialty:

In the East - Vinegar and chile pepper, sometimes mustard seed, various spices
In the Piedmont - Tomato and rub
Light on the sauce, often used only in preparation of the meat, often not served as a condiment. Good Carolina 'cue shines when the sauce is subtle compliment to the meat, not the predominant flavor.
Wood: Hickory
Best side dishes:
Coleslaw
Hushpuppies
Cooking style:
Indirect heat/smoke, extremely slow, 20 hours or more.
* Just don't call chicken "barbecue" in either of the Carolinas. They'll look at you funny and probably take it as an insult.

Dude, KC bbq isn't sweet, except for that crap from KC Masterpiece, which nobody here eats, or likes anyway, strictly a tourist place. At any rate the KC Masterpiece sauce is more of a Memphis style sauce. Real KC sauce tends more toward the tangy/vinegarish side, even ranging into the downright hot.

I would like to know just what qualifies Huckleberry as an expert on BBQ? And no, Gates BBQ in KC is not sweet. It was very good. Never knew Carolina was known for bbq. Texas and Kentucky, yes.

Because I've studied it for years, myself and two of my friends trolled the countryside in 1996-97 collecting notes, interviews, photos and recipes* from numerous owners, pitmasters, connoisseurs and aficionados, historians and anthropologists for a book we were going to write on the subject, long before that kind of thing was all too popular.
Since, I've spent years honing my own barbecuing acumen and compiling my own recipe book.
But I'm not an expert.

And apparently neither are you.
For the record: Yes, of course you can get all different kinds of barbecue and/or sauce in any city in the country. But if I go to a joint that serves Memphis style ribs in KC, that doesn't magically make it KC style BBQ after the fact.
KC BBQ is generally known for, sauce wise, a sauce based primarily on brown sugar, heavy tomato paste and various spices. It is far and away the sweetest among the predominant styles of BBQ.
Is it the same as eating pure cane sugar?
Of course not.
* Up to, but never including, the secret ingredients/spices/rub mixtures that made their particular recipe signature.

Never claimed to be an expert Huck. Not living or traveling on the east coast, there are a lot of local cuisines I am not familiar with. Only expertise I have is 45 years of cooking knowledge and knowing what I like to eat and cook and what goes well together. And Gates BBQ restaurant in KC has been a landmark for a LONG long time so I guess someone besides me likes their bbq. Out here on the west coast there aren't too many decent bbq joints to be found. On the other hand, talk seafood and I could send you to dozens of decent places in Oregon.
Too bad you haven't done your cookbook on bbq. I like collecting cookbooks and would like to at least peruse yours.
