I try and spend some quiet time just sitting and listening to the "silence" before the daily chaos of the world breaks in.

hmmmm, I guess I'd spend it knitting or sewing or crocheting. I have to work on things in spurts normally so I'd find it very peaceful to have a nice big chunk of time to focus on something I was working on.
Reading, writing, typing, studying (school stuff & scriptures), pondering, day-dreaming, staring into space thinking about nothing...
