As for the macarons, I like the idea of the freeze dried raspberries, even if the color is not as peppy after baking. But so much more appealing than using coloring. What is is with macarons and food coloring?! Why is it suddenly OK to serve chemically-colored neon-green cookies?
Anyway, I'm sorry to hear your last macarons were a failure. I hoped you had "cracked the code" once and for all.


Gravatar Astrid, I see that you have been quite busy yourself, and precisely with baking projects that have long been on my agenda. i still did not attempt puff pastry, and you are on to croissants! (They look lovely, even the ones you considered a failure.)

As for the macarons, i find them very tricky. Recently, I baked lopsided macarons as well as ones with spilled-over feet just like you did. Interestingly, there were a couple of OK ones on each tray, which --to me-- indicates that success is a very sensitive function of temperature. Just like you, i experimented with natural flavors and colors for the shells, but i am far from getting consistently good results. Who knows, maybe one day...

Gravatar Thanks for your response Zinnur. Puff pastry is a breeze, I promise! You have succeeded at much more challenging baking projects. Croissants are a bit more time-consuming, and shaping is not always easy, but they're doable. Or at least they were the first two times I made them.
But macarons have me stumped. I constantly feel like I *almost* have them mastered, but not quite. Of course, I haven't tried an Italian meringue recipe yet. I've resisted as these recipes seem super sweet and too meringue-y, but perhaps the consistent results they produce are worth it.

Gravatar Well, that was truly a marathon baking session! It can be fun sometimes though if you are in the right frame of mind. A former colleague of mine used to use baking as a form of stress relief - she would start with a full bag of flour (1kg) and not stop until the bag was finished.

I like your adaptation of the Sacher torte. I especially liked the addition of the pistachio around the edge of the cake. Can you buy the pistachios pre-sliced or did you do that yourself?

i chanced on the sliced pistachios in a Persian market in San Diego. They were quite expensive; i suspect that they were hand-sliced, but i cannot imagine myself doing as good a job of it.
